Here are three meal preparation ideas for suhur (the pre-dawn meal) during Ramadan:

  1. Oatmeal with Nuts and Fruits:
  • Ingredients:
    • 1 cup rolled oats
    • 2 cups water
    • 1/4 tsp salt
    • 1/4 cup chopped nuts (such as almonds, walnuts, or pistachios)
    • 1/4 cup chopped dried fruit (such as apricots, dates, or raisins)
    • 1 tbsp honey or maple syrup (optional)
  • Instructions:
    1. In a medium saucepan, bring the water to a boil.
    2. Add the oats and salt and reduce the heat to medium-low.
    3. Cook, stirring occasionally, for about 5-7 minutes, or until the oats are tender and the mixture is thick.
    4. Stir in the nuts, dried fruit, and sweetener (if using).
    5. Serve hot.
  1. Shakshuka:
  • Ingredients:
    • 1 tbsp olive oil
    • 1/2 onion, chopped
    • 1 red bell pepper, chopped
    • 2 garlic cloves, minced
    • 1 tsp ground cumin
    • 1 tsp smoked paprika
    • 1/4 tsp cayenne pepper
    • 1 can (14 oz) diced tomatoes
    • 4-6 eggs
    • Salt and black pepper, to taste
    • Fresh parsley or cilantro, chopped (optional, for garnish)
  • Instructions:
    1. Heat the oil in a large skillet over medium heat.
    2. Add the onion and bell pepper and cook until softened, about 5 minutes.
    3. Add the garlic, cumin, paprika, and cayenne pepper and cook for another minute, stirring constantly.
    4. Add the diced tomatoes and stir to combine.
    5. Simmer for about 10 minutes, or until the mixture has thickened.
    6. Using a spoon, make small wells in the mixture and crack an egg into each well.
    7. Season with salt and black pepper.
    8. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
    9. Serve hot, garnished with fresh herbs if desired.
  1. Smoothie Bowl:
  • Ingredients:
    • 2 ripe bananas, frozen
    • 1 cup frozen mixed berries (such as strawberries, raspberries, and blueberries)
    • 1/2 cup plain Greek yogurt
    • 1/4 cup almond milk (or any milk of your choice)
    • 1 tbsp honey or maple syrup (optional)
    • Toppings of your choice (such as chopped nuts, sliced fruit, granola, or coconut flakes)
  • Instructions:
    1. Combine the frozen bananas, frozen berries, Greek yogurt, milk, and sweetener (if using) in a blender.
    2. Blend until smooth and creamy.
    3. Pour the smoothie into a bowl.
    4. Add your desired toppings.
    5. Serve immediately.
